the seductive side of spinach tortillas

I’ve been wandering around my kitchen all morning wondering how in the world I can make spinach tortillas look seductive…..

Do you know how hard it is to make green food look good?!  I’m not talking about salad green, or fresh cucumbers… I’m talking about baked goods that look green. It’s almost like asking the Grinch to pose for glamour shots.

The pictures fail though.

I’m telling you, I kept frying up tortillas & before I could even plate them, I was stuffing them in my mouth. I made my way through FOUR before I managed to actually set one aside for the picture.

So much flavour!

Immediately after I was done photographing them… I whipped myself a scrambled egg & quinoa filling with fresh parsley & sweet chili sauce. I know that probably doesn’t sound appealing, but it was frickin’ amazing.

I assure you… the colour of these tortillas are all natural & the flavour is overwhelmingly delicious. I can’t wait for Mel to come home so I can get him to make me chicken burritos again!

chocolaty cake for the sports lovers

I think the thing I like most about making cakes, is the reactions of the people receiving them!

This girl who ordered this, wanted to give the cake as a gift to two of her friends who had their nameday on Monday. One friend was heavily into basketball, the other was a lover of all things NIKE. You can’t see it in this picture, but the side of the cake had a football (soccerball for you Americans) pattern on it!

Eleni, the girl who ordered it loved it so much, she ran up to me & hugged me!

That’s the kind of reaction that always makes me endlessly happy.

Any way, there’s a rich chocolaty cake in the middle of all that decoration, & a mascarpone filling to it….. It’s a little sweeter than my usual cake, but that’s also because I was making it for teenagers… and you can never have enough sugar when you’re a teenager!

coconut chocolate chip pancakes!

What a day!

I had planned on posting these coconut pancakes up yesterday. I actually made them in the morning so that I could have a nice filling breakfast in preparation for the long day ahead….

Of course, as soon as I was done eating, I got called in to work.

I am beyond happy to report that this week I have been working alongside Eirini to help make the desserts for the wedding that happened last night. That’s right, 200 chocolate mousse & 200 mini strawberry pavlovas.

Yesterday, all our work paid off too. Yesterday, I got to put on some fancy chef whites & work alongside Vangelis (from Chili Catering) doing the mies en plas for the event.

12 long hours on my feet & a non-stop go-go-GO approach & it was FANTASTIC!

I had the time of my life!

So clearly, there was no time to share my filling pancake breakfast. Thank god for that breakfast too since I didn’t have a chance to eat anything else until 01:00 the following morning…. where I stood quietly in the shadows stuffing my face with left over dolmades & sipping on a cocktail from Baba that Vangeli had brought in as a little treat for the staff once we were done. What a night!

So here I am, sleepy on a Sunday morning, planning to melt on the couch the entire day with my feet up, feeling the warm summer island breeze coming through the open doors, the sun light hitting the floor & a little take-out to sedate my hungry stomach…. & now I have to tell you how wonderful my little chocolate chip pancakes were.

Light, fluffy, filling, slightly sweet from the bitter chocolate & honey, completely gluten-free, dairy-free & sugar-free…. but nothing about them makes you feel like you’re lacking or missing out. They are what they are. & what they are, is delicious.
