I made these cookies look like Rubik’s Cubes just so I could laugh.

My motivation to make a fantastic gluten-free shortbread today came from a very practical place. You see, it’s imperative for every baker to have an amazing shortbread recipe in their repertoire. It’s such a versatile cookie that its possibilities are endless. Not to mention that if you’re gluten-free, your search for a good recipe may not have been the easiest so I wanted to offer you peace of mind.

Also, I keep saying I’m going to post one up so I’m just trying to keep my word.

As for making gluten-free Rubik’s Cube cookies

…well, there’s no explanation.

I literally sat looking at my discs of chilled shortbread dough & all of a sudden I decided I wanted to laugh.

Yea, my job makes me laugh all the time. There’s nothing like building a fondant world to get your abs aching from all the giggling. Mel just looks at me like I’ve lost the plot when he catches me at my work space giggling all by my self.

So there you have it. My inner child took over today & this is the results.

cabbage & caramelized hazelnut salad

Let me share with you all a problem I have been facing the last few years. I have developed an amazing craving for nuts & seeds that is bordering on an obsession. I put nuts in my salads, my rice, I eat them with honey & I put them in pastry bases. My favorite way  lately is using funky nut butters like almond or cashew as spreads on anything I can find… the other day I was dipping walnuts in cashew butter! However healthy they may be, they are still on the top of the list for the most fattening foods you can eat.

Example:
100gr of almonds = 600 calories
100gr of sugar = 400 calories
100gr of ice cream = 200 calories.

This explains why I can’t lose any weight when all I eat are “salads”. That being said though, I’m not gaining any either…. and if we’re taking into consideration the type of calories begin consumed, nuts are amongst the healthiest forms of calories you can get. See, it’s all about which is better for you.

This recipe today is an amazing combination of flavors & very healthy in the modified way I present it here…. instead of eating the whole thing myself & just sprinkling some cabbage on top of a bowl full of nuts

green tea shortbread

…at least that’s what Clio would say.

Yes. In this instance I have clearly seen a bunch of other people design their cookies like this, & I took so much joy from the pictures that I just had to replicate the design for myself.

Here’s my twist though…. they are gluten-free, sugar-free & dairy-free! Not to mention guilt-free. They are not free of fun though, I assure you. I can safely say this since I’ve consumed about half of them so far & still counting.

I kid you not. It is actually really easy to omit the bad & replace it with good (sugar being the “bad” & honey being the “good”). This is how I made these cookies completely mine. Not to mention that I didn’t flavor them peanut butter, or orange, or something else like so many of the others I’ve seen… I actually flavored them with green tea. Matcha green tea.

Not bad huh?

You don’t have to want to make your cookies look like tea bags to want to make these though. I promise you that any old cookie cutter will do the trick. Or just cut them in squares. “Whatever blows your dress up”, as my mum would say.

cream cheese, blackberry & rolled oat muffins

You know those moments where you’re sitting, looking at a recipe & thinking to yourself “my god that’s a lot of butter”.

You sit there scratching your head & wondering about whether or not you should reduce it, replace it with oil, or maybe find some other substitute for it.

Don’t. Just don’t to it.

Instead what you should do is take out a calculator & divide it by the number of portions the recipe says it’s going to make & just plane realize that realistically speaking, when it comes right down to it, it really isn’t all that much.

I tried to do that earlier in the week. I was looking at one of my old recipes thinking about how I could adapt it into something new & gluten-free, maybe even put a healthy spin on it by throwing in some whole oats, so I cut out almost half of the butter & sugar.

Big mistake. I should have taken my own advice.

Actually, I sat there looking at the by product & wondering “what in the world have I done?!”.

I can’t accept failures as failures though. They down-right irritate the living daylights out of me. So I worked myself up into a fluster, went out & topped up on all the ingredients I’d run out of, & today I finally got my butt back in the kitchen to make things right!

Oh, and did I ever make them right!!!! I even threw in some fresh blackberries… mmm mmm mmm.

white chocolate chip, chili chocolate cookies

I don’t have words for today, I’m still assessing the situation & trying to figure out what exactly it all means. Cryptic, I know.

I do know this though, there was a surprising amount of sunshine & heat on what was predicted to be another gloomy London day. That in & of itself calls for something a little special.

So, I come bringing the heat as well…. so to speak. Do you like a bit of chili with your chocolate? Have you tried the two together? Do it. Make these gluten-free chili chocolate cookies with white chocolate chunks.
